It's Chinese New Year again. We pretty much breezed through it last year since my LO was still an infant. But since she has leveled up (>1 year old), I reckon this year will be a challenge. At this age, adults (especially the older folks) generally think nothing of it if she’s given sweets, chocolates, cookies/biscuits/tarts made from bleached, processed flour, salt etc during CNY. In fact, some of these people think it's OK to feed her junk food ever since she started taking solids. I'm tired of hearing people telling me, "She's old enough to eat all these", "She will be so deprived", "I've seen younger kids eating junk food and fizzy drinks", "Just let her try everything so can train up her immune system", "I used to let my kid eat all these last time and they grew up fine" bla bla bla... The list goes on... 

Anyway, I have already baked an awesome batch of yogurt bites for her using her favorite banana so she can have them instead. Baked another batch with fresh mangoes too. At least, these cute little bites are yummy and healthy, not some processed creations full of sweet poison aka sugar and other nutritionally devoid ingredients. :P 


Also a good way to feed her yogurt as she doesn't like eating it plain with fruits.

Ingredients:

  • 1 egg white
  • 3 drops of lemon juice
  • 15g baby formula milk powder
  • 8g potato starch (Can also replace with corn starch)
  • 25g yogurt, pick a flavor that your baby likes (I mixed mashed banana with Greek yogurt)

  1. Preheat oven to 100°C.
  2. Mix yogurt, milk powder and potato starch til you get a smooth texture.
  3. Beat egg white and lemon juice til stiff peaks form. You can test them by lifting the beaters straight up from the egg whites. Peaks should remain on top of the egg whites, and when the bowl is tilted, the mixture should not slide around.
  4. Take 1/3 of the whipped egg whites and fold gently into the yogurt mixture. Add in rest of the egg whites to the batter and continue to fold gently. Don’t beat/stir/overmix, or the whites will deflate!
  5. Put the mixture in a piping bag. Squeeze and pipe your desired shapes and sizes.
  6. Bake for 50 minutes in the preheated oven.
